Faella's Linguine comes from Torre Annunziata - one of the historic centres of Neapolitan pasta production - made from carefully selected semolina and slow-dried in the sea air. Their Paccheri is a wide, open tube from the same Campanian tradition, built for sauces that need space to move into. Voiello's Gran Fusillo is a large-format spiral from a brand that has been producing quality pasta in the same region since 1879 - a pasta for robust, assertive sauces that fill every coil. Borella's Bigoli Traditional comes from the Venetian countryside, thick and rough-surfaced in the northern Italian style, designed for bold, strongly flavoured preparations.
