Marco Colzani - Sicilian Peach Jam (260g)
Marco Colzani is an artisan producer based in Carate Brianza, in Lombardy - a project that started in 2014 with a single apple juice for the family's own pastry shop, and grew from there into a full workshop making chocolate, spreadable creams, fruit juices and jams. He sources fruit from more than 30 partner farms spread across Italy, choosing specific regions and specific varieties for each product rather than working with generic bulk fruit.
This jam uses Montagnola yellow peaches grown and harvested in Sicily, at a fruit ratio of 110g per 100g of finished jam - meaning the jar contains more fruit by weight than the finished product itself, with the excess accounted for during the low-temperature, vacuum-processed cooking that concentrates the fruit down. No added pectin is used; the jam sets from the peaches' own natural structure and sugar content alone, which is part of why it reads as genuinely peach-forward rather than generically sweet.
Ingredients: Peaches, sugar. Just two ingredients, no pectin, preservatives, or added colouring.
The Montagnola variety is prized for its aromatic intensity and its balance between sweetness and acidity - qualities that a slow, low-temperature process is built to preserve rather than cook away.
Best for: Spreading on brioche or toast, pairing with soft cheese or burrata, filling a tart, or stirring into plain yogurt.
