Voiello - Fusillo Bucato (500g)
Fusilli Bucato - hollow fusilli - is the more ambitious sibling of the standard helix. Where regular fusilli is solid, fusilli bucato has an open tube running through its centre, which means sauce can enter from inside the corkscrew as well as wrapping around the outside. The result is a pasta that delivers more sauce per bite and does so in a more interesting structural package.
Voiello's version is made from the same high-quality durum wheat blend that runs through the entire range - Senatore Cappelli wheat for flavour, bronze dies for texture, slow-drying for structure. The shape is technically demanding to produce well: the hollow tube must remain intact through drying and cooking without collapsing. Voiello's technical depth, developed over more than a century of production in Torre Annunziata, is what makes the result consistent.
In the bowl, fusilli bucato catches sauce in every direction at once. The spiral grips on the outside; the hollow draws in sauce from within. For preparations with both liquid and solid components - a ragu with braised meat, a seafood stew with clams and their liquor - this is a pasta that holds it all together rather than letting pieces separate.
It is also a good choice for pasta salad where visual interest and sauce retention matter equally. The shape holds dressing well even when cold, keeps its structure, and adds textural variety to a composed plate.
This is pasta that earns its complexity. The extra engineering is not for show - it genuinely changes how the dish eats.
Best for: Meat ragu, seafood sauces, pasta bakes, thick vegetable sauces, and pasta salads where sauce retention and visual interest are both important.
