Le Ferre - D.O.P. Terra di Bari Extra Virgin Olive Oil (500ml)

D.O.P. - Denominazione di Origine Protetta - is the most tightly regulated olive oil designation in the EU system, tying the oil to a specific, narrowly defined production zone and a fixed disciplinare governing everything from cultivar to processing method. Le Ferre's D.O.P. sits within the Terra di Bari appellation, in the Castel del Monte subzone, and is made from 100% Coratina grown and pressed to meet that disciplinare's stricter limits.

It's the same cultivar as the estate's I.G.P. Olio di Puglia, but the narrower, more regulated appellation is a meaningful difference - D.O.P. status requires the entire chain, from grove to bottle, to stay within the designated zone and follow the certified production method. Le Ferre's tasting notes describe an intense fruity nose with slight bitter notes and a spicy tickle in the aftertaste, the structural signature of Coratina at its most concentrated. Olives are hand and mechanically picked directly from the tree, moved into perforated crates, and cold-pressed within 24 hours at below 27°C on the estate's own groves around Castellaneta.

This is Le Ferre's most credentialed bottle - the one to reach for when the origin and the process behind the oil matter as much as the flavour itself.
