Le Ferre - I.G.P. Olio di Puglia Extra Virgin Olive Oil (500ml)

I.G.P. - Indicazione Geografica Protetta - is a looser designation than D.O.P., covering oil produced anywhere within the wider Puglia region rather than a single tightly drawn subzone. Le Ferre's I.G.P. Olio di Puglia is made from 100% Coratina, the same cultivar behind their D.O.P. Terra di Bari, but grown and pressed under the broader regional rules rather than the narrower appellation.

Coratina is one of the more assertive native Puglian varieties - naturally high in polyphenols, which is where its bitterness and peppery finish come from. Le Ferre's tasting notes describe the nose as pleasant vegetal notes with bitterness and spice of varying intensity, in harmony, and the palate carries the smell of freshly mown grass, fresh almonds, and artichoke - textbook Coratina character. The olives come from the same estate groves around Castellaneta, vase-trained at a density of 330 plants per hectare, picked directly from the tree and pressed within 24 hours at below 27°C to preserve that intensity.

Because it's built on 100% Coratina rather than a blend, this is a more assertive, structured oil than the Multivarietale - one that holds its own against strong flavours instead of disappearing into them.

Best for: Bruschetta, bean and legume dishes, grilled meats, robust tomato sauces, and any dish that benefits from a peppery, structured extra virgin olive oil.
